slow cooker

I can’t believe I only have one more gratitude post to do!  These 21 days have gone by quickly.  That being said, I’m thankful it’s almost over.  It’s not that I have trouble coming up with things to be grateful for it’s just that I don’t have the time to blog every day!!!  How do people do this??

We’re in entertaining mode.  We just finished with a group of house guests and our next set arrive this Thursday.  To cope with all this hosting, I have been making use of my slow cooker…a lot.   When you’re out and about all day, there’s little time or energy to make a feast come 5pm.  I’ve been grateful for my slow cooker.  It’s made life easier.

I wanted to share a couple of recipes that really worked out well.  I made slow cooker pork tenderloin with sweet potatoes and apples–a Pinterest find (didn’t have time to take a picture but it was really good–and gluten-free!).  I’ve also made slow cooker lemon and olive chicken twice now, a Canadian Living goodie (made this for Halloween dinner and it tasted divine).  Both of these have become “Mommy Meals” that I plan to make over and over again for my family.
